This amazing summer dinner can be made in less than 30 minutes. It is so easy, you don't need a recipe. Simply coat the mahi mahi in flour, dip the floured fish in beaten egg, then roll in crushed dry-roasted macadamia nuts. Place in a buttered baking dish, drizzle a little melted butter over the crusted fish, and bake for ~10 to 15 minutes at 375F. When the fish is flaky, you know it is done. Place atop your favorite salad or rice dish and enjoy!
