Amazing Guacamole

Guacamole makes my day! I could eat chips endlessly if there is good guacamole on the table. Freshly made guacamole also takes a simple left-overs dish, like tonight's tri-tip burritos, and makes it something special. Here is the recipe I used for this fresh batch of deliciousness.

Ingredients

2 avocados 
2 limes
1 handful of cherry tomatoes or equivalent, chopped
1 clove garlic chopped finely
1/2 chile chopped finely
1/2 small bunch of cilantro
1/4 red onion chopped
salt
pepper



 

 

Preparation

  1. Roughly chop tomatoes and cilantro. Finely chop garlic, onion and chile.
  2. Pile all chopped ingredients onto a cutting board together and scoop the flesh of two avocados on top. 
  3. Chop up the avocados on top of the other other ingredients to mix.
  4. Using a lime press, squeeze the juice of 1.5-2 limes over the mixture and continue to chop and combine.
  5. Add salt and pepper to taste.
