Once you get quick at this, it is one of the fastest dinners to prepare.Just toss your veggies into the roasting pan to cook with the chicken.
Ingredients
Whole chiken
Olive oil
Herbs de Provence
Butter
Salt
Pepper
1/2 a Lemon
A couple sprigs of Rosemary
Step 0. Preheat your oven to 450F
Step 1. Take a whole chicken, remove the giblets bag, and set in roasting dish.
Step 2. Pat dry. Some say rinse the chicken, but I don't think it is necessary
Step 3. Make a tunnel under the breast skin on each side and drizzle in olive oil, herbs de Provence, salt and pepper if you like it.
Step 4. Stuff a half a lemon and the rosemary in the cavity.
Step 5. Tie the chicken up and rub some butter on the skin.
Step 6. Roast in dish on middle tray for about an hour or until the chicken reaches 165F.
