1/2 & 1/2 BBQ Chicken Pizza

Pizza is stress-free food, a fun meal, and a dinner that brings all ages together. When made well, it is also incredibly delicious. Nothing pleases me more than making a pizza dinner that brings my boys running to the table yelling, "Dinner time!" We made a half BBQ Chicken Pineapple and half BBQ Chicken Bell Pepper pizza for a half sweet, half savory pizza that the whole family devoured.

 

Ingredients

1 ready-made pizza dough
1 chicken breast torn into pieces
1 ladle of bbq sauce
1 clove garlic chopped finely
1 large handful of shredded Italian cheese blend
1/2 cup sliced pineapple
1/2 small bunch of cilantro, torn into pieces
1/4 red onion chopped
1/4 of a bell pepper, sliced



Preparation

  1. Pre-heat oven to 550F and follow any directions for preparation of the pizza dough. The Trader Joe's herb dough instructions are to open the package and let the dough rise for 20 minutes.
  2. Roll out dough onto a well-floured pizza stone.
  3. Spread around a ladle of BBQ sauce on the dough, leaving a border for the crust.
  4. Sprinkle ingredients over the sauce: Chicken, garlic, red onion, pineapple, bell pepper, cilantro and top with cheese.
  5. Bake 10-15 minutes until dough is cooked and cheese is bubbly.   
We like to eat our pizza topped with arugula, some balsamic dressing, a little chili infused oil, and a bit of salt.
